K won (38) reported the safety threshold of cell viability at 85% when comparing antioxidant effects of various mulberry root bark extracts. The mango leaf fermented extract concentrations for cell viability test- ing in this study ranged up to 2.5 mg/ml where the previous study’s safety thresholds of 85% were demonstrated. Therefore, further cell viability tests beyond the ranges tested in this study would be necessary to establish the safety threshold for mango leaf fermented extracts. In conclusion, the antioxidative effects of microbial fermentation products containing mango leaf extracts may serve as a basis for their use in developing a variety of health foods and fermentation-based beauty products.
